Making GF Banana Bread

Allie was so sad that she didn't have preschool today. She was bored and didn't want to do anything. I suggested we make banana bread, and after a little convincing she was excited.

Ready to get started.
Allie was so full of questions. She wanted to help with everything. Here she is pouring in the milk.
Allie loved squishing the bananas in their peels. Then she had even more fun mashing them in the bowl.
Everything is in and mixing. We only had one small disaster when Allie turned the mixer on and milk and egg when flying everywhere. It is really hard to control the mixing level.
Allie also had fun being a photographer. She was having lots of fun documenting everything I did. Our recipe made three loaves. I think I'm going to take one to a friend who has celiac disease but really hasn't experimented with cooking gluten free yet.
In the oven.
Then Allie helped with the most important part of cooking-cleaning up while your food bakes. She was such a good helper. We got everything wiped down, the dishwasher loaded and unloaded, and all the ingredients put away. Then she got to watch Dora while the bread finished cooking.
It's done!!! Doesn't that just look yummy! Allie was anxious for me to take the picture so she could try a bite.
Perfect golden brown.
The official taste test-"It was hot and yummy! I love it!!!"

Looks pretty yummy--GF or not! So do you just use GF flour??

I have to make my flours from a combination of rice flour, tapioca flour, potato flour, potato starch, and cornstarch. It gets a little old when you first have to make flours before you can bake, but it is worth the effort to get something that tastes pretty close to "normal."
